Mindful Eating – Roasted Sweet Potatoes

Roasted Sweet Potatoes


4 large sweet potatoes
Olive oil
Cayenne pepper(optional)

Scrub potatoes clean. With skins still on them, cut into small pieces. Spray a large flat pan or 9×13 glass pan with cooking spray. Bottom part of broiler pan works great. Pour potatoes into pan. Pour 3-4 tablespoons of olive oil over potatoes and then stir so they are coated evenly with oil. Preheat oven to 400 degrees. Place potatoes uncovered into oven. Bake for 20 minutes, then take out and turn them over. Bake additional 20-25 minutes until done. Pour 2 tablespoons olive oil on potatoes and sprinkle with cayenne pepper if want them to have a little zing.

To take to an event, line crock pot with foil and place potatoes in crock pot on warm. Enjoy!
